RAVENNA CENTESIMINO IGP
100% Centesimino, an indigenous red grape
Magretto refers to the new label collection named “Bandits of Rogmagna”, newly designed and released by Randi winery. “Magretto”, born Giovanni Zalmabani in 1770 in Piangipane, Ravenna, died during a shooting at the age of 36, nearby the Abbadesse fields of Bagnocavallo. Despite his light constitution (“magretto” in Italian means “skinny”), Giovanni started off as a well digger and was considered one of the most dangerous bandits operating in the Ravenna and Forli areas. Magretto wine is obtained by the vinification of select Centesimino grapes.
A limpid and transparent ruby red colour. A uniform and weighty consistency, forming delicate, wellspaced legs that move slowly but consistently. The nose is austere, with aromas of dense ripe black fruits such as blackcurrant, blackberry and blueberry as well as raspberry, leading to hints of ripe wild rose jam, blackberry compote and baked fruits. The spicy finish reveals hints of white pepper, cinnamon and star anise. The palate mirrors the nose and presents a good acidity combined with tannins that are astringent and youthful though not invasive. Saline notes are well balanced by the tannins, enhancing the flavour.
The mid-palate displays black pepper and mature fruits, good acidity and crunchy tannins that make it very drinkable.
Food pairings: charcuterie, both aged and fresh; finocchiona salami; pork loin; roast pigeon; eel; larded swordfish.
